Shellfish hygiene and purification - a guide to inspection


Aims and objectives

To ensure that delegates understand the reasons for shellfish processing and purification, and gain practical experience and skills, in particular in relation to HACCP and controls of critical points.

It will refresh knowledge of factors affecting the hygiene of shellfish, and public health.

Delegates will become familiar with the detail of the legislation and the current guidance produced by Seafish, and how this should be applied.

This two day course will include case studies and group exercises to provide an opportunity for questions and discussion.

Why should you attend?

Processing and purification of shellfish is very different from carrying out official controls in other types of food premises, and failure to implement effective hygiene controls can have serious public health impact. This course seeks to provide a clear and detailed explanation of shellfish purification, with an emphasis in building up practical skills and knowledge to give confidence to enforcement officers.

This course is intended to go back to basics and builds from first principles, reducing misunderstandings, and enhancing delegates? confidence in applying the current guidance. The course will use case studies to help develop inspection strategies; to know how to ask for information; and how compliance can usually be achieved.

The course will blend a range of practical enforcement with an update on the factors affecting public health and shellfish hygiene.

Who should attend?

Important notes for delegates

This is a residential course. Overnight accommodation will be provided.

This event is accredited with 12 hours and 30 minutes of CIEH CPD.
