Vacuum and modified atmosphere packaging course for local authority enforcement officers - Northern Ireland


In the last few years there has been a huge increase in the use of vacuum packing machines in small businesses, not just manufacturers. It is frequently used to maintain the quality and shelf life of chilled food, in a form which consumers may prefer. This course looks at the safe use and cleaning of vacuum packing and modified atmosphere packing (MAP) equipment. It will cover the microbiology and controls needed when using this technology. The course aims to help enforcement officers by providing answers to key issues through case studies and group?s discussions.

Aims and objectives

This one day course will improve delegates understanding of:

  • vacuum packing and MAP technology and equipment
  • microbiological issues, in particular the growth of Clostridiom botulinum toxin
  • Validating HACCP and carrying out official controls, and shelf life determinations.

Local authority food safety officers in England, who want to update and refresh their knowledge on safe use and cleaning of vacuum packing and modified atmosphere packing (MAP) equipment
